Ingredients:

  • 200g ramen noodles
  • 500ml chicken broth
  • 100g miso paste
  • 150g sliced shiitake mushrooms
  • 100g baby spinach
  • 2 soft-boiled eggs
  • 2 green onions, chopped
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon chili oil
  • Salt to taste

Kitchen Tools Needed:

  • Pot
  • Strainer
  • Bowl
  • Chopping board
  • Knife

Instructions:

  • Bring a pot of water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.
  • In a separate pot, heat the sesame oil over medium heat. Add the sliced shiitake mushrooms and sauté until tender.
  • Add the chicken broth, miso paste, soy sauce, and chili oil to the pot with mushrooms. Stir well and bring to a simmer.
  • Add the baby spinach and cook for an additional 2 minutes until wilted.
  • Divide the cooked ramen noodles into two bowls and ladle the hot broth and mushrooms over the noodles.
  • Halve the soft-boiled eggs and place one half on each bowl of ramen.
  • Garnish with chopped green onions and serve hot.
