Ingredients:
- 200g ramen noodles
- 500ml chicken broth
- 100g miso paste
- 150g sliced shiitake mushrooms
- 100g baby spinach
- 2 soft-boiled eggs
- 2 green onions, chopped
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 teaspoon chili oil
- Salt to taste

Instructions:
- Bring a pot of water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.
- In a separate pot, heat the sesame oil over medium heat. Add the sliced shiitake mushrooms and sauté until tender.
- Add the chicken broth, miso paste, soy sauce, and chili oil to the pot with mushrooms. Stir well and bring to a simmer.
- Add the baby spinach and cook for an additional 2 minutes until wilted.
- Divide the cooked ramen noodles into two bowls and ladle the hot broth and mushrooms over the noodles.
- Halve the soft-boiled eggs and place one half on each bowl of ramen.
- Garnish with chopped green onions and serve hot.
