Ingredients:

  • 200g of chopped roti (flatbread)
  • 150g of mixed vegetables (carrots, cabbage, and bell peppers)
  • 100g of cooked chicken, shredded
  • 2 eggs
  • 2 tablespoons of soy sauce
  • 1 tablespoon of curry powder
  • 1 tablespoon of vegetable oil
  • Salt to taste
  • Pepper to taste
  • Fresh coriander for garnish

Kitchen Tools Needed:

  • Large frying pan
  • Spatula
  • Knife
  • Cutting board

Instructions:

  • Heat the vegetable oil in a large pan over medium heat.
  • Add the mixed vegetables and sauté for 3-4 minutes until they are tender.
  • Push the vegetables to one side of the pan and crack the eggs into the other side, scrambling them until fully cooked.
  • Add the shredded chicken and chopped roti to the pan, mixing everything together.
  • Pour in the soy sauce and sprinkle the curry powder, salt, and pepper over the mixture.
  • Stir-fry everything together for another 5 minutes until heated through and well combined.
  • Garnish with fresh coriander before serving.
